Monday Meal Plan #1

Meal planning is how our family cut back on going out to eat, spending money on food we don't eat and keeping it healthy! Each Sunday I pick out our meals for the upcoming week and grocery shop. We know exactly what we're having each night so I never get the dreaded question "what's for dinner?". Here is this weeks meal plan...


Monday - Chickpea Pasta + Meatballs










This is one of my favorite meals because it's so easy and quick to make and it's packed full of protein. I get all the ingredients from Costco and they're typically ones I have on hand at all times. Chickpea pasta, Rao's Pasta Sauce and Frozen Meatballs.


Tuesday - Tilapia, Rice + Veggies










Tilapia is my favorite fish! I get the frozen ones at Costco, and when I bake it, I season it with avocado oil and Montreal steak seasoning. I typically pair it with roasted veggies and I make rice for Collin. Super yummy and super easy!


Wednesday - Pizza + Salad










Another easy dinner! If you can't tell, easy is my favorite kind to make. I throw in a pizza from Costco and while it's cooking, I make a salad. I eat greek salads a lot so I usually have everything I need to make it. I get frozen pizza from Costco and there are so many different kinds to choose from. Our go-to is the Kirkland Supreme with cauliflower crust.


Thursday - Tortilla Soup












Another Costco favorite...tortilla soup! It's already made, I just have to heat it up! I get sour cream, avocado and cheese to add to it, but it's honestly really yummy without all that! This is usually pretty filling so I don't normally pair it with a side.


Friday - Ground Turkey Terriyaki Bowls











Easy Friday dinner! We celebrate Sabbath starting Friday night so we like to make dinner even more simple, if that's even possible! I'll cook up some ground turkey, bell peppers, zucchini and onion with teriyaki sauce. I'll put it on some white rice and top it will sriracha and oh my, so yummy!


Saturday + Sunday - Leftovers

We are a big leftover family and by the end of the week we need to finish what we've already cooked or make what needs to be eaten. I am a big leftovers girl so the weekends are perfect!
